You will need the following:
1 package of chicken tenders (skinless & boneless)
1/2 package of soba noodles
(soba noodles are buckwheat noodles, popular in Japan. They are inexpensive, and taste like pasta! I promise.)
Green onion
Low sodium teriyaki sauce
(enough to coat chicken)
Olive oil (enough to coat your pan)
Garlic poweder, salt and pepper to preference.
On medium high heat, add in olive oil, teriyaki sauce, and seasoned chicken) sear on both sides, and add lid, let simmer for 10 minutes.
In a pot, bring water to a boil and boil soba noodles. They cook quickly, so no more than 5 minutes. Drain noodles, and shock them (that means run cold water over them so the cooking process stops)
Mix noodles, chicken and green onion together, and enjoy! This is extremely easy and tasty!
(Pot stickers are store bought and super optional. These ones I bought at Costco. They're low fat, chicken and veggie.)
