1 can kidney beans
1 can garbanzo beans (chickpeas)
1 can black beans
1 can corn
2 tbs apple cider vinager
1 or 2 sprigs worth of thyme
1 sprig worth chopped cilantro (optional)
1/2 diced shallots
salt and pepper to preference
Let marinate in fridge over night
serve cold! It is super yummy especially on top of salads! Enjoy!

Wow, super yummy! I like that this recipe is made up of ingredients that just about everybody has stuffed away somewhere in a cupboard. :D
